They are called uncured, in accordance with USDA regulations because they are never made with chemical nitrates; instead we use all natural ingredients, including rosemary oils, cherry powders and celery extracts. The extended dry aging period purposefully stimulates external bloom growth around the salumi. This natural porous environment attracts a moisture rim that delivers enhanced richness and complexity, as well as precious earthy and nutty flavors. Salame has become a staple at American tables!
